Liam 1 1024x683 - Chef with Michelin-Star Talent Takes the Lead at The Swan, West MallingNewly-appointed Head Chef, Liam Fauchard-Newman, is set to turn up the heat at The Swan, West Malling.

Having worked in several renowned kitchens such as The Ledbury and The Square, which each boast Michelin stars, the talented Chef brings a wealth of experience to the team.

Liam, who previously reached the finals of The National Chef of the Year contest, describes his style of cooking as “honest and delicious”.

“I’m looking forward to a new challenge,” he said. “It’s a great opportunity to bring some new and interesting dishes to The Swan and to be able to put my own stamp on the menu.”

Crediting Philip Howard and Mark Kempson as his main influences, Liam’s career started aged 15 when he secured his first job in a professional kitchen.

He added: “For me, the best and most rewarding part of being a Chef is seeing the great reactions when people taste the food I’ve created. It’s a labour of love and the main reason I wanted to pursue a career in this industry.”

After making a shortlist of applicants for the role of Head Chef, owners Nick Levantis and Darryl Healy made the decision to appoint Liam after being impressed by his cooking skills and creativity.

They said: “Liam’s experience speaks for itself but his tasting stood out for us as being absolutely outstanding. We’re delighted for Liam take lead of the kitchen at The Swan and we’re looking forward to working together on what will be a fresh and exciting menu.”

Liam will join The Swan on Monday, May 20th, just in time for our fabulous family Garden Party on Sunday, May 26th.

Liam will be showcasing some of his favourite dishes at our next Chef’s Table event on Thursday, July 4th. Join us at 7pm for fizz and canapés in our upstairs Library bar, before sitting down in the Lounge for a delicious five-course meal.
