New Head Chef Showcases Talent at Chef’s Table Debut
The Swan’s new Head Chef made quite the impression at his first Chef’s Table.
Liam Fauchard-Newman designed an eight-course menu for the evening, which took place on July 2nd, to showcase some of his favourite dishes and incredible culinary skills.
The popular event sold out in less than an hour, with 18 people securing a spot around a large table set in our upstairs lounge private dining room; creating a lively and sociable atmosphere.
Each of the courses were paired with a carefully selected wine from our extensive list. Nick, one of our directors, was on-hand to explain each wine and why it complimented its paired dish.
Liam also used the opportunity to introduce himself and give an insight into his menu, which began with champagne and canapés. Other dishes included Steamed Cornish Cod, Dashi & Enoki Mushrooms, followed by Pressed Lamb Shoulder, Salsa Verde, Potato Galette & Heritage Carrots. The meal finished with a beautiful dessert of Whipped Ricotta, Roasted Apricots & Honeycomb.
